Homemade Dates and Oat Cookies

Dates and Oat Cookies recipe and fulfill your sweet tooth.

Ingredients:

  • 1/2 cup pitted chopped dates
  • 1/2 cup coconut flakes
  • 1/4 cup Peanut butter (optional)
  • 2 large eggs
  • 1 teaspoon brown sugar
  • ½ cup unsalted butter softened
  • ¾ cup white flour (you can also replace it with coconut flour or almond flour)
  • 1 cup oats
  • 1/4 cup raisins
  • 1/4 cup chopped nuts of choice: pecans, almonds, or walnuts (walnuts preferable)

Instructions:

  • In a medium bowl, add butter and brown sugar. Then beat in the eggs one at a time. Combine all ingredients together until a moist, soft dough is formed. Cover and leave the dough to chill in the refrigerator for half an hour.
  • Preheat oven to 375 degrees F (190 degrees). Grease the cookie sheets. Shape the dough into walnut sized balls, and place 2 inches apart on the cookie sheets Flatten each cookie with a fork.
  • Bake for 8 to 10 minutes in preheated oven. Allow cookies to cool on baking sheet for 5 minutes before serving them.

Drizzle some Nutella or any other syrup of your choice to garnish.
