Chicken Panini

Ingredients:
- 2 slices whole wheat bread or whole wheat multigrain bread
- 1 tabs mayonnaise
- 3 ounces roasted chicken breast fillet
- 2 tabs cranberry sauce
- 2 slices of cheddar cheese
- 1 tabs fresh thyme leaves (you can use ½ tsp dried thyme instead of fresh thyme)
- Salt to taste
- White pepper to taste
Instructions:
- Spread the mayonnaise on both sides of the bread. Place the sliced chicken breast on top of one slice and add fresh or dried thyme leaves.
- Dollop on the cranberry sauce and slices of cheese. Cover the sandwich with the other slice of bread.
- Transfer the sandwich to Panini press. Press together gently to help the whole sandwich stick together.
- Cook 3-4 mins until the bread is crisp, golden and the cheese is melted.
- Slice in half and serve quickly to enjoy the melty, cheesy, crunchy goodness.
